Yes, you should include an adjustable Truss Rod.

I want to make a solid body with a through neck. The neck will have 7 laminations. It is also going to be thicker because I have large hands and I think it would be easier for me to play do i still need a truss rod.

Coming from a fellow luthier - this is one of the best guitars on youtube! I am a huge fan of neck throughs! Some of my favorite parts are the thin laminations on the headstock and body and the cover on the back made from the same piece of wood. Is the finish lacquer?
