Another thing that helps thicken the sauce, besides reducing the cider, is adding a bit of cornstarch. I know it's not in the recipe, but I tried it when my own sauce didn't thicken, and it worked very well. But reducing the cider is also a good way to do it.

This is the Nigella Express series, so everything's supposed to be cooked the fast and easy way.
If you watch her other series like Nigella Summer, Nigella Feast, etc. you'll see that she seasoned and marinated them almost all the time.
