he just put a bit of water in with the veg in a normal pan. everything that is submerged is boiled, everything above the water line is steamed. less water = more steaming, but dont let it dry out.

Ajinomoto is not necessary. I made this last weekend and it came out really gggreat. I didnt even use the tandoori food color. I used Yellow food color, corn flour, salt, ginger garlic paste into a think paste, breaded Gobi florets and deep fried them - Kept them aside. Sauteed finely chopped red onions, greenchillies, GG paste, Bertollini Sauce, and then some Soy sauce into it - No Chilli powder, nothing. Dont add too much of Soy Sauce- the paste will thicken a lot = dropped the fried gobi, mix
